P.S. Ginger...
Since it’s summertime, here’s a tip for using your ginger peelings to make iced ginger tea. I just tried this recently.
- After you are done processing your multiple pounds of ginger for freezing, put the peelings in a small pot and cover with water.
- Bring to a boil and simmer 5 minutes.
- Remove the pot from the heat and let the mixture sit another 20 minutes.
- Strain out the peelings and you have a ginger concentrate, which you can store in the fridge or freezer, for making summertime cold teas.
bout 2 tbsp. with 12 oz. water makes a nice ginger tea, straight up, or you can add it to other brewed teas, hot or cold. I froze mine in an ice cube tray in handy 2 tbsp. portions (about one regular-sized ice cube) for adding to cold drinks. Tonight I mixed it with sparkling water…tasty and refreshing.
